Quick Healthy Lunch Recipe



1 cup cooked quinoa

1 cup sweet corn 

1 cucumber, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh mint leaves, chopped

Juice of 1 lime

2 tablespoons extra-virgin olive oil

Salt and pepper to taste


In a large bowl, combine the cooked quinoa, sweet corn, cucumber, cherry tomatoes, red onion, and fresh mint leaves.

In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

Pour the dressing over the quinoa salad and toss to coat all the ingredients evenly.

Taste and adjust the seasonings if needed.

Let the salad sit for a few minutes to allow the flavours to meld together.

Serve the quinoa salad chilled or at room temperature.

This quinoa salad is packed with fresh vegetables, herbs, and the nutty flavour of quinoa. It’s a great option for a light and nutritious lunch. You can also add some protein by incorporating grilled halloumi, prawns,  chicken or chickpeas. Enjoy your delicious and healthy quinoa salad!
