Preheat the air fryer to 180°C (360°F). Wash courgette and cut into approximately 1-inch chunks.
Dip courgette sticks in beaten egg, then coat with breadcrumbs, salt, and pepper.

HEALTHY AIR FRYER BAKED APPLE WITH CINNAMON, HONEY AND RAISIN.
INGREDIENTS:
1 large apple (e.g. Bramley, Gala, or Braeburn)
1 tbsp raisins
½ tsp ground cinnamon
1 tsp honey (or maple syrup for a vegan option)
½ tsp lemon juice (to prevent browning)
1 tsp chopped walnuts (optional, for crunch)
A small knob of butter (optional, for extra richness)
INSTRUCTIONS:
Wash the apple and core it, leaving the bottom intact to create a small well for the filling. You can use a knife or an apple corer.
In a small bowl, mix raisins, cinnamon, and chopped walnuts (if using). Spoon the raisin mixture into the hollowed-out apple. Drizzle with honey and a touch of lemon juice. HEALTHY AIR FRYER TOASTED HALLOUMI,ROCKET AND TOMATO SANDWICH
INGREDIENTS:
1 slice of bread of your choice
3 slices halloumi
4 cherry tomatoes, halved
Handful of rocket leaves
½ tsp olive oil
½ tsp balsamic vinegar
½ tsp dried oregano
Pinch of black pepper
½ tsp honey (optional, for caramelisation)
INSTRUCTIONS:
Toss cherry tomatoes with olive oil, balsamic vinegar, oregano, and black pepper.
Place in the air fryer at 190°C and roast for 5-7 minutes until soft.
Add halloumi slices to the air fryer and cook at 180°C for 5 minutes, flipping halfway.
Drizzle with honey in the last minute for extra flavour.
Place the slice of bread in the air fryer at 180°C for 2-3 minutes until lightly crispy. Layer the toasted bread with rocket leaves, crispy halloumi, and roasted tomatoes.
Drizzle with extra balsamic vinegar if desired, and enjoy warm!
